Instructions

  1. Rinse the lentils under cool water until it runs clear. Soak for about 30 minutes.
  2. Heat olive oil in a large pot over medium heat. Sauté the sliced onions until golden brown (10-15 minutes).
  3. Stir in soaked lentils, cumin, and allspice; cook for another minute.
  4. Add water, bring to a boil, then reduce heat to low. Cover and simmer for 25-30 minutes until lentils are tender.
  5. Stir in basmati rice; cover and cook until the rice absorbs liquid (15-20 minutes).
  6. Let sit covered for an additional 5 minutes before fluffing with a fork.
