  • 2 lbs beef short ribs
  • 2 tbsp extra virgin olive oil
  • 1 large sweet onion, chopped
  • 2 medium carrots, chopped
  • 4 cloves fresh garlic, minced
  • 28 oz canned whole peeled tomatoes, crushed
  • 1 cup dry red wine
  • 1 tsp dried oregano
  • 1 cup fresh basil leaves, chopped
  • 12 oz tagliatelle or pappardelle pasta
  • Salt and pepper to taste
  • Freshly grated Parmesan cheese for serving

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Season short ribs with salt and pepper; sear until browned on all sides (about 8 minutes). Remove from pot.
  2. In the same pot, sauté onions and carrots until onions are translucent (approximately 5 minutes).
  3. Add minced garlic; cook for an additional minute. Pour in red wine, scraping up the browned bits from the bottom of the pot.
  4. Return short ribs to the pot along with crushed tomatoes, oregano, basil, salt, and pepper. Bring to a simmer.
  5. Partially cover and simmer on low heat for 2-3 hours until short ribs are fork-tender.
  6. Cook pasta according to package instructions until al dente. Serve topped with Bolognese sauce and sprinkle with Parmesan cheese.
