  • 2 cups almond flour
  • 1/4 cup coconut flour
  • 2 tsp baking powder (gluten-free)
  • 3 large eggs
  • 1/2 tsp salt
  • 1/2 cup water (room temperature)
  • 2 tbsp olive oil or coconut oil

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan with coconut oil or line it with parchment paper.
  2. In a large bowl, whisk together almond flour, coconut flour, baking powder, and salt until well blended.
  3. Create a well in the center of the dry mixture and add eggs, water, and olive oil. Stir until smooth.
  4. Pour the batter into the prepared loaf pan and smooth out the top.
  5. Bake for 30-35 minutes until golden brown and springy when pressed.
  6. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely before slicing.
