Ingredients

Scale
  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 tsp salt
  • 1 tsp active dry yeast
  • 1/4 cup whole milk (warm)
  • 2 large eggs
  • 1/4 cup unsalted butter (melted)
  • 3/4 cup canned pumpkin purée
  • 8 oz cream cheese (softened)
  • 1 tsp ground cinnamon
  • 1/4 tsp freshly grated nutmeg
  • 2 cups powdered sugar (for glaze)
  • 1/4 cup milk or cream (for glaze)

Instructions

  1. Prepare the brioche dough by combining flour, sugar, salt, yeast, warm milk, eggs, and melted butter. Knead until smooth and let it rise in a warm place until doubled in size (about 1 hour).
  2. In a bowl, mix pumpkin purée, cream cheese, cinnamon, nutmeg, and sugar until smooth to create the filling.
  3. Roll out the risen dough on a floured surface to about half an inch thick and cut into circles. Create holes in half for ring-shaped doughnuts.
  4. Pipe filling onto half of the circles and top with remaining circles; seal edges well. Fry in hot oil (350°F) until golden brown (about 2 minutes per side).
  5. Whisk together powdered sugar and milk/cream for glaze consistency while cooling slightly.
  6. Dip warm doughnuts into glaze and allow excess to drip off before serving.
