Instructions

  1. Preheat the oven to 400°F (200°C) and line two baking sheets with parchment paper.
  2. Roll out the puff pastry on a floured surface and cut into 3×4 inch rectangles. Place on baking sheets.
  3. Bake for 15-20 minutes until golden brown. Let cool.
  4. Mash raspberries in a bowl and mix with half the powdered sugar to taste.
  5. Whip heavy cream with remaining powdered sugar until stiff peaks form.
  6. Layer cookies by spreading raspberry filling on one pastry piece, topping with whipped cream, then another pastry layer. Repeat until stacked.
  7. Dust with powdered sugar and garnish with fresh raspberries before serving.
