  • 1 medium eggplant, diced
  • 2 medium zucchinis, diced
  • 2 bell peppers (mixed colors), diced
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 can (14 oz) crushed tomatoes
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 2 tbsp fresh basil, chopped
  • 1 tbsp fresh thyme, chopped
  • 3 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a baking dish with olive oil.
  2. Dice the eggplant, zucchini, bell peppers, onions, and garlic into uniform pieces.
  3. In a large skillet over medium heat, sauté onions in olive oil until translucent. Add garlic until fragrant.
  4. Stir in the remaining vegetables and crushed tomatoes; season with salt and pepper. Simmer for about 10 minutes.
  5. Layer half of the veggie mixture in the baking dish; top with half the cheese. Repeat layers.
  6. Cover with foil and bake for 30 minutes. Remove foil and bake an additional 15–20 minutes until golden brown.
  7. Let sit for 10 minutes before serving hot as a main or side dish.
