  • 3 lbs Beef Chuck Roast
  • 2 medium Yellow Onions, chopped
  • 4 cloves Garlic, minced
  • 1/2 cup Fresh Cilantro, chopped
  • 1/4 cup Fresh Lime Juice
  • 2 Chipotle Peppers in Adobo Sauce
  • 2 tsp Ground Cumin
  • 2 tsp Dried Oregano
  • 1 tsp Salt
  • 1/2 tsp Black Pepper

Instructions

  1. Trim excess fat from the beef chuck roast and cut into large chunks.
  2. In a skillet, sauté the chopped onions over medium heat until translucent. Add minced garlic and sauté until fragrant.
  3. Blend chipotle peppers with adobo sauce, lime juice, cumin, oregano, salt, and pepper in a blender until smooth.
  4. Place seasoned beef in the slow cooker and pour the spice mixture over it.
  5. Cover and cook on low for 8 hours or high for 4 hours until the meat is tender.
  6. Shred the beef with two forks directly in the slow cooker and mix with juices before serving.
