  • 1/2 cup unsalted butter, softened
  • 2 large eggs, room temperature
  • 1 tsp pure vanilla extract
  • 2 cups mini marshmallows
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a baking dish by spraying it with nonstick cooking spray.
  2. Boil the cubed sweet potatoes in salted water until fork-tender, about 15 minutes. Drain and return to the pot.
  3. Mash the sweet potatoes until smooth while still warm. Mix in butter, brown sugar, eggs, vanilla extract, cinnamon, nutmeg, and a pinch of salt until well combined.
  4. Pour the mixture into the prepared baking dish and top with mini marshmallows.
