  • 1 cup heavy cream
  • 1 cup grated sharp cheddar cheese
  • 1/2 cup grated Gruyère cheese
  • 1 tsp garlic powder

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray.
  2. Cut the spaghetti squash in half lengthwise, scoop out the seeds, and drizzle olive oil over the cut sides. Season generously with salt and pepper.
  3. Place the squash halves cut-side down on the baking dish and roast for about 40 minutes until tender.
  4. While roasting, whisk together heavy cream, garlic powder, and half of the grated cheeses in a bowl; season to taste.
  5. After roasting, flip the squash over and scrape out the strands with a fork into a separate bowl. Mix with the creamy sauce until well coated.
  6. Transfer the mixture back into the squash shells, sprinkle remaining cheese on top, and bake for an additional 15-20 minutes until bubbly and golden brown.
