  • 3 large eggs (room temperature)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, combine graham cracker crumbs and sugar; mix in melted butter until crumbly.
  3. Firmly press the mixture into the bottom of a springform pan.
  4. Bake the crust for about 10 minutes until golden brown; let cool.
  5. In a mixing bowl, beat cream cheese until smooth. Add sugar, sour cream, vanilla, and eggs one at a time until well combined.
  6. Fold in chopped strawberries gently.
  7. Pour filling over cooled crust and bake for 50-60 minutes until set but slightly jiggly in the center.
  8. Cool at room temperature before refrigerating overnight.
