  • 2 tbsp granulated sugar
  • 1 cup fresh strawberries (chopped)
  • 1 cup heavy whipping cream
  • 1/2 cup powdered sugar
  • 1 tsp pure vanilla extract

Instructions

  1. Preheat oven to 400°F (200°C). In a saucepan, combine water and butter over medium heat until melted. Add flour and sugar, stirring until a thick dough forms.
  2. Remove from heat, let cool slightly, then add eggs one at a time, stirring until smooth.
  3. Line baking sheets with parchment paper and pipe tablespoon-sized mounds of dough onto the sheets.
  4. Bake for 20-25 minutes until golden brown and puffed; do not open the oven during baking.
  5. While pastries cool, whip heavy cream until soft peaks form. Gradually mix in powdered sugar and vanilla extract. Fold in chopped strawberries.
  6. Fill cooled pastry shells with strawberry cream just before serving.
