  • 2 cups sweet corn (fresh or frozen)
  • 8 oz cream cheese (softened)
  • 1/2 cup sour cream
  • 1 cup cheddar cheese (shredded)
  • 2 tbsp lime juice (freshly squeezed)
  • 1 tsp chili powder
  • 1/4 cup cilantro (chopped)
  • Tortilla chips (for serving)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine softened cream cheese, sour cream, lime juice, and half of the shredded cheddar cheese until smooth.
  3. Fold in the sweet corn, chili powder, and chopped cilantro. Taste and adjust seasoning if needed.
  4. Transfer the mixture to a greased baking dish and top with remaining cheddar cheese. Bake for 20 minutes until bubbly and golden.
  5. Garnish with extra cilantro and lime juice before serving with tortilla chips.
