  • 1 cup fresh breadcrumbs
  • 1 medium onion (finely chopped)
  • 2 cloves garlic (minced)
  • 1 large egg
  • ¼ cup milk
  • ½ tsp nutmeg
  • 1 cup sour cream
  • 2 cups low-sodium beef broth
  • 2 tbsp flour
  • 2 tsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • Salt and pepper to taste

Instructions

  1. In a large bowl, mix ground beef, breadcrumbs, onion, garlic, egg, milk, nutmeg, salt, and pepper until just combined.
  2. Sauté additional diced onion in a skillet over medium heat until soft.
  3. Form the meat mixture into small balls (about 1 inch in diameter) and place on a parchment-lined baking sheet.
  4. Heat oil in the same skillet over medium-high heat and sear meatballs until browned on all sides (6–8 minutes).
  5. In the same skillet, whisk in flour until golden; gradually add beef broth while scraping up brown bits.
  6. Stir in sour cream, Worcestershire sauce, and Dijon mustard; simmer for about 5 minutes until thickened.
  7. Serve warm over mashed potatoes or noodles with chopped parsley.
