  • 2/3 cup granulated sugar
  • 2 large eggs

  • Pinch of salt

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a madeleine pan.
  2. In a large bowl, whisk together the sugar and eggs until fluffy. Stir in the melted butter.
  3. In another bowl, combine the flour, baking powder, and salt; gently fold into the egg mixture until just combined.
  4. Scrape the seeds from the vanilla bean and mix them into the batter along with any remaining melted butter.
  5. Fill each mold about three-quarters full with batter and bake for 10-12 minutes until golden brown.
  6. Allow to cool slightly before removing from the pan.
