Instructions

  2. Grate the zucchini and squeeze out excess moisture using a clean kitchen towel.
  3. In a large bowl, mix together flour, sugar, baking soda, cinnamon, and salt.
  4. In another bowl, whisk eggs, then add grated zucchini and oil; mix until combined.
  5. Combine wet and dry ingredients gently until just mixed—do not overmix!
  6. Pour batter into the prepared loaf pan and bake for 50-60 minutes or until a toothpick comes out clean.
  7. Allow to cool slightly before slicing.
