- 1 lb baby potatoes
- 2 tbsp extra virgin olive oil
- 1 tsp sea salt
- ½ tsp freshly cracked black pepper
- ½ tsp garlic powder
- 2 tbsp fresh herbs (parsley or rosemary), chopped
- Boil the baby potatoes in salted water for 15-20 minutes until fork-tender. Drain and let cool for 5 minutes.
