  • 2 cups ripe pineapple chunks (fresh or canned)
  • 1 cup full-fat coconut milk
  • 2 tablespoons honey or granulated sugar (adjust to taste)
  • 2 tablespoons light rum (optional)

Instructions

  1. Cut fresh pineapple into chunks and place in a blender (drain canned pineapple).
  2. Add coconut milk and honey (or sugar) to the blender. If using rum, add it here too.
  3. Blend until smooth and creamy, about 1-2 minutes.
  4. Taste the mixture and adjust sweetness if necessary; blend briefly again.
  5. Pour the mixture into popsicle molds, leaving space at the top for expansion.
  6. If your molds come with sticks, insert them now; otherwise, cover with foil and poke sticks through.
  7. Freeze for at least 4 hours until solid.
