Ingredients

Scale
  • 1 medium butternut squash (about 2 lbs), peeled and cubed
  • 1 lb sirloin or flank steak
  • 4 cloves fresh garlic, minced
  • 2 tbsp extra virgin olive oil, divided
  • 1 tsp fresh rosemary, chopped
  • 1 tsp fresh thyme, chopped
  • Salt and pepper to taste
  • Juice of 1 lemon
  • 1 cup cooked quinoa or rice
  • 1/2 cup crumbled feta cheese (optional)
  • 1 avocado sliced (optional)

Instructions

  1. Preheat the oven to 400°F (200°C). Toss the cubed butternut squash with 1 tablespoon of olive oil, rosemary, salt, and pepper. Spread evenly on a baking sheet.
  2. Roast the squash for 25-30 minutes until golden brown and fork-tender, flipping halfway through.
  3. In a bowl, combine minced garlic, remaining olive oil, lemon juice, salt, and pepper. Add steak and marinate for at least 15 minutes.
  4. Heat a skillet over medium-high heat. Sear the marinated steak for about 4-6 minutes per side until desired doneness. Let it rest before slicing.
  5. Assemble bowls by placing a base of quinoa or rice topped with roasted squash and sliced steak. Add feta cheese and avocado if desired.
