  • 1 lb lean ground beef
  • 8 corn tortillas
  • 2 cups shredded cheese (cheddar and Monterey Jack blend)
  • 2 cups enchilada sauce (homemade or store-bought)
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • Fresh cilantro for garnish
  • 1 can (14.5 oz) fire-roasted tomatoes
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp sugar

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, brown ground beef over medium heat. Add onions and garlic; cook until fragrant.
  3. Stir in canned tomatoes, chili powder, cumin, and sugar; simmer for about 10 minutes until thickened.
  4. Spread some enchilada sauce in the bottom of a baking dish. Fill each tortilla with the beef mixture and shredded cheese, then roll tightly.
  5. Place rolled tortillas seam-side down in the dish, cover with remaining sauce and sprinkle with more cheese.
  6. Bake uncovered for 20-25 minutes until bubbly. Garnish with fresh cilantro before serving.
