Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 4 cloves fresh garlic, minced
  • 1 cup heavy cream
  • 1 cup dry white wine (like Sauvignon Blanc)
  • 1 cup chicken broth
  • 2 cups fresh thyme leaves (approximately 10 sprigs)
  • Salt and pepper to taste
  • Juice of 1 lemon
  • ½ cup grated Parmesan cheese

Instructions

  1. Preheat oven to 400°F (200°C). Pat the chicken breasts dry with paper towels and season generously with salt and pepper.
  2. In a large oven-safe skillet over medium-high heat, add olive oil. Sear chicken for about 5 minutes on each side until golden brown. Remove from skillet and set aside.
  3. In the same skillet, reduce heat slightly and sauté garlic and thyme until fragrant (about 1 minute).
  4. Pour in white wine and scrape up browned bits from the skillet; let simmer for about 3 minutes before adding chicken broth.
  5. Stir in heavy cream and Parmesan cheese; allow to thicken slightly (about 5 minutes).
  6. Return chicken breasts to the skillet, spoon sauce over them, then transfer to the preheated oven. Roast for about 20 minutes until cooked through.
  7. Serve immediately with crusty bread or over pasta.
