Ingredients

Scale
  • 1 cup wild rice
  • 3 cups low-sodium vegetable broth
  • 2 tablespoons extra virgin olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 8 ounces fresh cremini or shiitake mushrooms, sliced
  • 2 teaspoons fresh thyme leaves (or 1 teaspoon dried thyme)
  • Salt and pepper to taste
  • ¼ cup toasted pine nuts

Instructions

  1. Rinse wild rice under cold water until clear. In a medium saucepan, combine rinsed rice and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for about 45 minutes until tender.
  2. While the rice cooks, heat olive oil in a large skillet over medium heat. Sauté the chopped onion until translucent (about 5 minutes), then add minced garlic for another minute.
  3. Add sliced mushrooms to the skillet and cook until golden brown (6-8 minutes), stirring occasionally.
  4. Once the rice is cooked, fluff with a fork and combine it with the sautéed mushrooms and onion in the skillet. Pour in any remaining broth from cooking.
  5. Season with thyme, salt, pepper, and toasted pine nuts. Cook on low heat for an additional 5 minutes to meld flavors.
  6. Serve warm on a platter or in bowls, drizzled with extra virgin olive oil if desired.
