  • 2 tsp Italian herbs (basil, oregano, thyme)
  • 1/4 cup toasted pine nuts
  • 2 tbsp olive oil

Instructions

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Place the turkey breast between plastic wrap and pound it to an even thickness of about ½ inch.
  3. In a bowl, mix spinach, feta cheese, sun-dried tomatoes, garlic powder, Italian herbs, and pine nuts.
  4. Spread the filling on the turkey breast, leaving one inch around the edges. Roll tightly into a log shape.
  5. Heat olive oil in an oven-safe skillet over medium heat and sear the roulade on all sides until golden brown (about 3-4 minutes per side).
  6. Transfer to the oven and bake for 25-30 minutes or until it reaches an internal temperature of 165°F (74°C). Let rest for 10 minutes before slicing.
