Ingredients

Scale
  • 1 lb large shrimp, peeled and deveined
  • 2 ripe avocados, diced
  • 1 cup cherry tomatoes, halved

  • 1/4 red onion, thinly sliced
  • 3 tbsp extra virgin olive oil
  • Juice of 1 lemon
  • 1/4 cup fresh parsley or cilantro, chopped
  • Salt and pepper to taste

Instructions

  1. Heat 2 tbsp of olive oil in a skillet over medium-high heat. Season shrimp with salt and pepper, then sauté until pink and opaque (3-4 minutes per side). Remove from heat.
  2. In a large bowl, combine diced avocados, halved cherry tomatoes, cucumber, and sliced red onion.
  3. Add the warm shrimp to the veggie mix. Drizzle with remaining olive oil and lemon juice; gently toss to combine without mashing the avocados.
  4. Serve in bowls topped with chopped herbs.
