  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 large onion, diced
  • 2 bell peppers (any color), diced

  • 2 tbsp chili powder
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups low-sodium beef broth
  • Fresh cilantro (for garnish)

Instructions

  1. Prepare all ingredients by chopping onions, dicing bell peppers, and mincing garlic.
  2. In a large pot over medium heat, add oil and sauté onions and bell peppers until onions are translucent.
  3. Increase heat slightly, add ground beef, and cook until browned; drain excess fat.
  4. Stir in minced garlic and chili powder; cook until fragrant.
  5. Add canned tomatoes and drained beans; mix well.
  6. Pour in beef broth, bring to a boil, then reduce heat to low. Cover partially and simmer for at least 30 minutes.
