  • 1 can kidney beans (15 oz), rinsed
  • 1 can pinto beans (15 oz), rinsed
  • 2 bell peppers (mixed colors), diced
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 can diced tomatoes (14.5 oz)
  • 2 cups low-sodium chicken broth
  • 2 tbsp olive oil
  • For topping: sour cream and cheddar cheese

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onions and bell peppers; sauté until softened.
  2. Add ground beef and cook until browned; drain excess fat.
  3. Stir in minced garlic, chili powder, and cumin; cook until fragrant.
  4. Mix in diced tomatoes, kidney beans, and pinto beans.
  5. Pour in chicken broth; bring to a simmer and cook for about 30 minutes.
  6. Serve hot topped with sour cream and cheddar cheese.
