  • 8 oz fresh mushrooms, sliced

  • 2 cups low-sodium beef broth
  • 1 cup full-fat sour cream
  • 2 tbsp all-purpose flour
  • 8 oz egg noodles or rice (cooked)
  • 2 tsp olive oil

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Sauté the beef for 3-4 minutes until browned. Remove and set aside.
  2. In the same skillet, add onions and mushrooms; cook for 5-7 minutes until golden brown. Add garlic and sauté for another minute.
  3. Sprinkle flour over the vegetable mixture; stir and let toast for about a minute. Gradually pour in beef broth while stirring continuously to prevent lumps.
  4. Return the beef to the skillet; simmer for 5 minutes to combine flavors.
  5. Lower heat and mix in sour cream until well combined. Adjust consistency with more broth if necessary.
  6. Serve over cooked noodles or rice, garnished with parsley if desired.
