  • 4 cups fresh spinach
  • 8 ounces penne pasta
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Preheat oven to 400°F (200°C). Cut the butternut squash in half, scoop out seeds, brush with olive oil, sprinkle with salt, and place cut-side down on a baking sheet.
  2. Roast the squash for 30-40 minutes until tender.
  3. In a skillet over medium heat, add olive oil and Italian sausage. Cook until browned (about 8 minutes).
  4. Add minced garlic to the skillet; cook for an additional 1-2 minutes. Stir in fresh spinach until wilted.
  5. Cook pasta according to package instructions; drain well.
