  • 1 cup shredded sharp cheddar cheese
  • 2 tsp olive oil
  • Salt and pepper to taste
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning

Instructions

  1. Preheat oven to 375°F (190°C) and grease a large baking dish.
  2. In a skillet, heat olive oil over medium heat. Sauté chopped onions and bell peppers for about 5 minutes until softened.
  3. Add ground beef to the skillet; cook until browned, breaking it apart (about 7 minutes). Drain excess fat if necessary.
  4. Stir in diced tomatoes, salt, pepper, garlic powder, and Italian seasoning; simmer for 5 minutes.
  5. Layer half of the sliced potatoes in the baking dish followed by half of the meat mixture. Repeat layers and top with cheese.
  6. Cover with aluminum foil and bake for 45 minutes. Remove foil and bake uncovered for an additional 15-20 minutes until bubbly and golden brown.
