  • 2 medium Russet potatoes (about 300g each)
  • 8 oz (225g) sirloin steak
  • 1 cup shredded sharp cheddar cheese
  • ½ cup crispy bacon bits

  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Preheat the oven to 425°F (220°C). Scrub the Russet potatoes and poke holes with a fork. Rub with olive oil and sprinkle salt.
  2. Bake potatoes directly on the oven rack for 45-60 minutes until fork-tender.
  3. While baking, cut the sirloin into bite-sized pieces and season with salt and pepper. Sear in a skillet over medium-high heat for 3-5 minutes until browned.
  4. Add bacon bits during the last minute of cooking to warm through.
  5. Remove baked potatoes from the oven, cut lengthwise without cutting all the way through, and fluff insides with a fork.
  6. Top potatoes with shredded cheese, steak bites, bacon bits, sour cream, and chives.
