  • 1 can (15 oz) pinto beans, rinsed and drained
  • 3 tablespoons chili powder
  • 2 teaspoons ground cumin
  • 2 cups low-sodium beef broth
  • 1 teaspoon sugar
  • Salt and pepper to taste

Instructions

  1. Prepare all ingredients by chopping onions, garlic, and bell peppers.
  2. In a large pot over medium heat, sauté onions in olive oil until translucent. Add minced garlic and cook for an additional minute.
  3. Increase heat slightly and add ground beef. Cook until browned, breaking it up as it cooks.
  4. Stir in diced bell peppers along with chili powder, cumin, salt, and pepper; mix well.
  5. Add canned tomatoes (with juice) and drained beans; stir thoroughly.
  6. Pour in beef broth to reach desired consistency; bring to a boil then reduce heat. Simmer uncovered for 30 minutes until thickened.
