Ingredients
  

For the Marinade
  • 4 fillets cod
  • 1/4 cup honey
  • 2 tablespoons soy sauce
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 2 cloves garlic minced
  • 1/2 teaspoon black pepper
For the Garnish
  • 2 tablespoons fresh parsley chopped

Method
 

Marinate the Cod
  1. In a bowl, whisk together honey, soy sauce, olive oil, lemon juice, minced garlic, and black pepper.
  2. Place the cod fillets in a shallow dish and pour the marinade over them. Ensure the fish is well-coated.
  3. Cover the dish with plastic wrap and refrigerate for at least 15 minutes to allow the flavors to meld.
Bake the Cod
  1. Preheat the oven to 400°F (200°C).
  2. Remove the marinated cod from the refrigerator and place the fillets in a baking dish.
  3. Pour any remaining marinade over the fish.
  4. Bake in the preheated oven for 15-20 minutes or until the cod is cooked through and flakes easily with a fork.
Serve
  1. Once baked, remove the cod from the oven and let it rest for a couple of minutes.
  2. Garnish with chopped fresh parsley before serving.
