Ingredients
  

For the Base
  • 4 cups Brussels sprouts trimmed and halved
  • 2 tablespoons olive oil for roasting
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
For the Dressing
  • 1/4 cup Greek yogurt for creaminess
  • 2 tablespoons lemon juice freshly squeezed
  • 1 clove garlic minced
  • 1 teaspoon Worcestershire sauce
  • 1/4 cup Parmesan cheese grated
For the Topping
  • 1 cup croutons store-bought or homemade
  • 2 tablespoons Parmesan cheese for garnish

Method
 

Prepare the Brussels Sprouts
  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss the halved Brussels sprouts with olive oil, salt, and pepper.
  3. Spread the Brussels sprouts on a baking sheet in a single layer.
  4. Roast in the preheated oven for 20 minutes, until crispy and golden brown, turning halfway through.
Make the Dressing
  1. In a small bowl, whisk together Greek yogurt, lemon juice, minced garlic, Worcestershire sauce, and grated Parmesan cheese until smooth.
  2. Taste and adjust seasoning if necessary, adding more salt or lemon juice to your preference.
Assemble the Salad
  1. In a large bowl, combine the roasted Brussels sprouts with the dressing and toss to coat evenly.
  2. Add croutons and mix gently to combine.
  3. Serve immediately, garnished with additional Parmesan cheese on top.
