These decadent Buckeye Brownies combine rich chocolate brownie layers with a creamy peanut butter topping, reminiscent of the classic Buckeye candy.

Ingredients
  

For the Brownie Base
  • 1 cup unsalted butter melted
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 cup all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
For the Peanut Butter Topping
  • 1 cup creamy peanut butter
  • 1 cup powdered sugar
  • 1/4 cup unsalted butter softened
  • 1 teaspoon vanilla extract
For the Chocolate Ganache
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream

Method
 

Prepare the Brownie Base
  1. Preheat the oven to 350°F (175°C) and grease a 9x13 inch baking pan.
  2. In a large bowl, mix melted butter and granulated sugar until well combined.
  3. Add the eggs, one at a time, mixing well after each addition. Stir in vanilla extract.
  4. In a separate bowl, whisk together flour, cocoa powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Pour the brownie batter into the prepared pan and spread evenly.
  7. Bake for 25-30 minutes or until a toothpick inserted into the center comes out with a few moist crumbs.
Prepare the Peanut Butter Topping
  1. While the brownies are baking, combine peanut butter, powdered sugar, softened butter, and vanilla extract in a medium bowl.
  2. Mix until smooth and creamy. Set aside until the brownies are completely cooled.
Make the Ganache
  1. In a small saucepan, heat heavy cream over medium heat until it begins to simmer.
  2. Remove from heat and add chocolate chips. Let sit for 2 minutes, then stir until smooth.
Assemble the Brownies
  1. Once the brownies have cooled, spread the peanut butter topping evenly over the brownie base.
  2. Pour the chocolate ganache over the peanut butter layer and spread evenly.
  3. Refrigerate for at least 1 hour to set before cutting into squares.
