Prepare the Base
- Preheat your oven to 350°F (175°C).
- In a skillet, heat olive oil over medium heat and sauté the sliced bell peppers and onion until they are soft, about 5-7 minutes.
- Add the fajita seasoning to the skillet and stir to combine, cooking for an additional 2 minutes.
- In a mixing bowl, combine the cooked vegetables with the cottage cheese until well mixed.
Assemble and Bake
- Transfer the cottage cheese and vegetable mixture into a greased baking dish, spreading it evenly.
- Sprinkle the shredded cheese evenly over the top of the mixture.
- Top with crushed tortilla chips for added crunch.
- Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbly.
