Ingredients
  

For the Dough
  • 3 cups all-purpose flour
  • 1 tablespoon ground ginger
  • 1 tablespoon ground cinnamon
  • 1 teaspoon ground cloves
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter softened
  • 1/2 cup brown sugar packed
  • 1/2 cup molasses
  • 1 large egg
For the Icing
  • 1 cup powdered sugar
  • 1-2 tablespoons water to reach desired consistency
  • 1/2 teaspoon vanilla extract

Method
 

Prepare the Dough
  1. In a large bowl, whisk together the flour, ginger, cinnamon, cloves, baking soda, and salt.
  2. In another bowl, beat together the softened butter, brown sugar, and molasses until smooth.
  3. Add the egg to the butter mixture and mix well.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
Chill and Roll Out
  1. Wrap the dough in plastic wrap and refrigerate for at least 1 hour.
  2. Preheat your oven to 350°F (175°C).
  3. On a lightly floured surface, roll out the dough to about 1/8 inch thickness.
  4. Cut into desired shapes using cookie cutters and place them on a baking sheet lined with parchment paper.
Bake the Cookies
  1. Bake in the preheated oven for 8-10 minutes, or until the edges are firm.
  2. Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack.
Prepare the Icing
  1. In a small bowl, mix the powdered sugar with enough water to achieve a smooth icing consistency.
  2. Stir in the vanilla extract.
Decorate and Serve
  1. Once the cookies are completely cool, decorate them with the icing using a piping bag or a small spoon.
  2. Let the icing set before serving or storing in an airtight container.
