Ingredients
  

For the Base
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/2 cup milk
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup boiling water
For the Peanut Butter Frosting
  • 1 cup creamy peanut butter
  • 1/2 cup unsalted butter softened
  • 3 cups powdered sugar
  • 1/4 cup milk more if needed
For Garnish
  • 1/2 cup chocolate chips
  • 1/4 cup chopped peanuts

Method
 

Prepare the Cake Base
  1. Preheat the oven to 350°F (175°C) and grease a 9x13 inch baking pan.
  2. In a large mixing bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add eggs, milk, vegetable oil, and vanilla extract. Beat on medium speed for 2 minutes.
  4. Stir in boiling water until well combined; the batter will be thin.
  5. Pour the batter into the prepared pan and bake for 30-35 minutes or until a toothpick comes out clean.
Prepare the Frosting
  1. In a mixing bowl, beat together the peanut butter and softened butter until smooth.
  2. Gradually add the powdered sugar and mix until well combined.
  3. Add milk as needed to achieve a creamy consistency.
Assemble the Cake
  1. Once the cake has cooled completely, spread the peanut butter frosting evenly over the top.
  2. Sprinkle chocolate chips and chopped peanuts on top of the frosting.
Serve
  1. Cut the cake into squares and serve. Enjoy your gooey chocolate peanut cake!
