Ingredients
  

For the Beef
  • 3 pounds beef chuck roast trimmed
  • 1 cup honey
  • 3 tablespoons chipotle peppers in adobo sauce minced
  • 2 tablespoons soy sauce
  • 1 tablespoon garlic minced
  • 1 tablespoon ground cumin
  • 1 teaspoon salt
  • 1 teaspoon black pepper
For the Tacos
  • 12 small corn tortillas
  • 1 cup fresh cilantro chopped
  • 1 cup red onion diced
  • 1 cup lime wedges

Method
 

Prepare the Beef
  1. In a large bowl, mix together the honey, chipotle peppers, soy sauce, garlic, cumin, salt, and black pepper.
  2. Place the beef chuck roast in a slow cooker and pour the honey chipotle mixture over the top.
  3. Cover the slow cooker and cook on low for 6-8 hours or high for 4-5 hours until the beef is tender and easily shredded.
Prepare the Tacos
  1. Once the beef is cooked, remove it from the slow cooker and shred it using two forks.
  2. Return the shredded beef to the slow cooker and mix it with the sauce.
  3. Warm the corn tortillas in a dry skillet over medium heat until pliable.
  4. Assemble the tacos by placing a generous amount of shredded beef on each tortilla.
  5. Top with chopped cilantro and diced red onion, and serve with lime wedges on the side.
