Ingredients
  

For the Base
  • 2 cups rolled oats
  • 1/2 cup peanut butter smooth
  • 1/2 cup honey
  • 1 medium lemon juiced and zested
  • 1/2 teaspoon vanilla extract
For the Topping
  • 1/4 cup shredded coconut unsweetened

Method
 

Prepare the Mixture
  1. In a large mixing bowl, combine the rolled oats, peanut butter, honey, lemon juice, lemon zest, and vanilla extract.
  2. Stir the mixture until all ingredients are well combined and form a sticky dough.
Form the Cookies
  1. Using your hands or a cookie scoop, portion out the mixture and shape it into cookie rounds.
  2. Place the cookie rounds on a lined baking sheet or a plate.
Add Topping
  1. Sprinkle shredded coconut on top of each cookie while the mixture is still sticky.
