Method
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
- In another bowl, mix the milk, melted butter, eggs, lemon zest, poppy seeds, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix.
- Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
- Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- While the muffins are baking, prepare the glaze by combining powdered sugar and lemon juice in a small bowl.
- Once the muffins are done, let them cool for a few minutes before drizzling with the lemon glaze.
