Ingredients
  

For the Carrots
  • 1 pound carrots peeled and cut into sticks
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
For the Glaze
  • 3 tablespoons maple syrup
  • 1 tablespoon Dijon mustard
  • 1 teaspoon apple cider vinegar

Method
 

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, combine the peeled and cut carrots with olive oil, salt, and black pepper. Toss until the carrots are evenly coated.
  3. Spread the carrots in a single layer on a baking sheet lined with parchment paper.
  4. In a small bowl, whisk together the maple syrup, Dijon mustard, and apple cider vinegar to create the glaze.
  5. Drizzle the glaze over the carrots, making sure they are well-coated.
  6. Roast the carrots in the preheated oven for 25-30 minutes, stirring halfway through, until they are tender and caramelized.
  7. Remove from the oven and let them cool for a few minutes before serving.
