Prepare the Ingredients
- Preheat the oven to 400°F (200°C).
- Line a large sheet pan with parchment paper for easy cleanup.
Prepare the Salmon Glaze
- In a small bowl, combine the maple syrup, Dijon mustard, garlic powder, salt, and pepper.
- Mix well until smooth and set aside.
Prepare the Vegetables
- In a large bowl, toss the broccoli, carrots, and bell pepper with olive oil and Italian seasoning.
- Spread the vegetables evenly on one side of the prepared sheet pan.
Add the Salmon
- Place the salmon fillets on the other side of the sheet pan.
- Drizzle the salmon with olive oil and season with salt and pepper.
Glaze the Salmon
- Brush the maple mustard glaze generously over each salmon fillet.
Bake
- Bake in the preheated oven for about 20 minutes or until the salmon flakes easily with a fork and the vegetables are tender.
Serve
- Remove from the oven and let rest for a few minutes.
- Serve warm, drizzled with any remaining glaze if desired.
