Prepare the Steak
- Preheat your oven to 400°F (200°C).
- Season the beef steaks with salt and crushed black peppercorns on both sides.
- Heat olive oil in a large oven-safe skillet over medium-high heat.

- Transfer the skillet to the preheated oven and cook for an additional 8-10 minutes for medium-rare.
Make the Sauce
- In the same skillet used for the steaks, melt the butter over medium heat.
- Add minced garlic and sliced mushrooms; sauté until the mushrooms are browned, about 5-7 minutes.
- Stir in the heavy cream and bring to a gentle simmer.
- Add the chopped brie cheese, fresh thyme, and soy sauce; stir until the cheese is melted and the sauce is smooth.
Serve
- Remove the steaks from the oven and let them rest for 5 minutes.
- Plate the steaks and generously spoon the creamy brie mushroom sauce over the top.
- Garnish with additional thyme if desired and serve immediately.
