This delightful no-bake tiramisu combines the rich flavors of pumpkin and warm spices, layered with creamy mascarpone and coffee-soaked ladyfingers for a perfect autumn dessert.

Ingredients
  

For the Base
  • 2 cups mascarpone cheese
  • 1 cup pumpkin puree
  • 1 cup heavy cream whipped to soft peaks
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 teaspoons pumpkin pie spice
For the Coffee Mixture
  • 1 cup strong brewed coffee cooled
  • 2 tablespoons coffee liqueur optional
For Assembly
  • 24 ladyfingers savoiardi
For the Topping
  • 1/2 cup whipped cream for garnish
  • 1 tablespoon cocoa powder for dusting
  • 1 teaspoon pumpkin pie spice for garnish

Method
 

Prepare the Pumpkin Mixture
  1. In a large bowl, combine mascarpone cheese, pumpkin puree, powdered sugar, vanilla extract, and pumpkin pie spice. Mix until smooth.
  2. Gently fold in the whipped cream until well combined and fluffy.
Prepare the Coffee Mixture
  1. In a shallow dish, mix the brewed coffee with coffee liqueur (if using).
Assemble the Tiramisu
  1. Quickly dip each ladyfinger into the coffee mixture, ensuring they are soaked but not soggy.
  2. Layer half of the soaked ladyfingers in the bottom of a 9x13 inch dish.
  3. Spread half of the pumpkin mixture over the ladyfingers, smoothing it out evenly.
  4. Repeat with another layer of soaked ladyfingers and the remaining pumpkin mixture.
Chill
  1. Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight for best results.
Serve
  1. Before serving, top with whipped cream and dust with cocoa powder and additional pumpkin pie spice.
  2. Slice and serve chilled.

Notes
