Ingredients
  

For the Base
  • 1 cup brown rice uncooked
  • 2 cups vegetable broth
  • 1 large potato cubed
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
For the Herb Mix
  • 1 tablespoon fresh rosemary chopped
  • 1 tablespoon fresh thyme chopped
  • 1 teaspoon garlic powder

Method
 

Prepare the Potatoes
  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, toss the cubed potato with olive oil, salt, pepper, and half of the chopped herbs.
  3. Spread the potatoes in a single layer on a baking sheet.
  4. Roast in the preheated oven for 25-30 minutes or until golden and tender, stirring halfway through.
Cook the Rice
  1. In a medium saucepan, bring vegetable broth to a boil.
  2. Add the brown rice, stir, and reduce heat to low.
  3. Cover and simmer for about 30 minutes or until rice is cooked and liquid is absorbed.
Combine and Serve
  1. Once the rice is cooked, fluff it with a fork and stir in the remaining herbs.
  2. Add the roasted potatoes to the rice and gently mix until combined.
  3. Serve warm as a side dish or vegetarian main course.
