Prepare the Mixture
- In a large bowl, combine the drained salmon, breadcrumbs, beaten egg, dijon mustard, chopped parsley, and lemon juice.
- Mix well until all ingredients are fully incorporated and form a cohesive mixture.
Form the Croquettes
- Using your hands, shape the salmon mixture into small patties, about 2 inches in diameter.
- Place the formed patties on a plate and refrigerate for 10 minutes to help them hold their shape.
Cook the Croquettes
- Heat the olive oil in a large skillet over medium heat.
- Once the oil is hot, add the croquettes in batches, being careful not to overcrowd the pan.
- Cook for about 4-5 minutes on each side or until golden brown and crispy.
Drain and Serve
- Once cooked, transfer the croquettes to a paper towel-lined plate to drain excess oil.
- Serve warm with tartar sauce on the side, if desired.

Notes
For added flavor, you can include diced green onions or bell peppers in the mixture. These croquettes can also be baked in a preheated oven at 400°F (200°C) for about 20 minutes, flipping halfway through.
