Ingredients
  

For the Base
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 cup buttermilk
  • 1 cup unsalted butter softened
  • 3 large eggs
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1/2 teaspoon salt
For the Apple Filling
  • 4 cups peeled and sliced apples such as Granny Smith
  • 1/2 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 2 tablespoons lemon juice
  • 1 tablespoon cornstarch
For the Cream Cheese Frosting
  • 8 ounces cream cheese softened
  • 1/2 cup unsalted butter softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

Method
 

Prepare the Cake Layers
  1. Preheat the oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk, starting and ending with the flour mixture. Mix until just combined.
  6. Divide the batter evenly among the prepared pans and smooth the tops.
  7. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the cakes cool in the pans for 10 minutes, then turn out onto wire racks to cool completely.
Prepare the Apple Filling
  1. In a large saucepan, combine the sliced apples, brown sugar, cinnamon, lemon juice, and cornstarch.
  2. Cook over medium heat, stirring occasionally, until the apples are tender and the mixture is bubbly, about 10-15 minutes.
  3. Remove from heat and let cool slightly.
Make the Cream Cheese Frosting
  1. In a mixing bowl, beat the softened cream cheese and butter together until smooth and creamy.
  2. Gradually add the powdered sugar and vanilla extract, mixing until well combined and fluffy.
Assemble the Cake
  1. Place one layer of cake on a serving platter. Spread a layer of apple filling on top.
  2. Add the second layer of cake and repeat the process with more apple filling.
  3. Top with the final layer of cake and frost the top and sides with cream cheese frosting.
  4. Decorate with remaining apple filling on top if desired.

Notes
