Method
Prepare the Cake Layers
- Preheat the oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.
- In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk, starting and ending with the flour mixture. Mix until just combined.
- Divide the batter evenly among the prepared pans and smooth the tops.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cakes cool in the pans for 10 minutes, then turn out onto wire racks to cool completely.
Prepare the Apple Filling
- In a large saucepan, combine the sliced apples, brown sugar, cinnamon, lemon juice, and cornstarch.
- Cook over medium heat, stirring occasionally, until the apples are tender and the mixture is bubbly, about 10-15 minutes.
- Remove from heat and let cool slightly.
Make the Cream Cheese Frosting
- In a mixing bowl, beat the softened cream cheese and butter together until smooth and creamy.
- Gradually add the powdered sugar and vanilla extract, mixing until well combined and fluffy.
Assemble the Cake
- Place one layer of cake on a serving platter. Spread a layer of apple filling on top.
- Add the second layer of cake and repeat the process with more apple filling.
- Top with the final layer of cake and frost the top and sides with cream cheese frosting.
- Decorate with remaining apple filling on top if desired.
