  • 1/4 cup fresh cilantro, chopped
  • 2 tbsp freshly squeezed lime juice
  • 3 cloves garlic, minced
  • 1 cup bell peppers, sliced (mixed colors)
  • 1 ripe avocado, sliced
  • 1 cup cooked white rice or quinoa
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. Marinate the steak by combining lime juice, minced garlic, chopped cilantro, salt, and pepper in a bowl. Add the flank steak and ensure it's fully coated. Let marinate for at least 30 minutes.
  2. Preheat your grill or skillet over medium-high heat. Remove the steak from the marinade (discard marinade) and cook for about 4-5 minutes on each side until nicely charred.
  3. While the steak cooks, prepare rice or quinoa according to package instructions.
  4. In a separate pan, heat olive oil over medium heat and sauté sliced bell peppers for 5-7 minutes until slightly softened but still crunchy.
  5. Once cooked, slice the steak against the grain into strips. Assemble bowls with a base of rice or quinoa topped with sautéed veggies, avocado slices, and steak pieces.
  6. Garnish with extra cilantro and lime wedges.
