Instructions

  2. In a large pot over medium heat, brown the lamb or beef until golden brown for about 5 minutes.
  3. Add onions and carrots to the pot; sauté until onions are translucent (about 5 minutes).
  4. Pour in the beef broth and add thyme. Bring to a simmer and cover; cook on low for about 1.5 hours until meat is fork-tender.
  5. Meanwhile, boil the potatoes in salted water until tender (15-20 minutes). Drain and return them to the pot.
  6. Mix in butter and cream; mash until smooth. Season with salt and pepper.
  7. Fold some of the stew into the mashed potatoes before serving warm topped with extra stew.
