Instructions

  1. Preheat the oven to 375°F (190°C). Spray muffin tins with nonstick spray and press flour tortillas into the cups to form bowls. Bake for 10-12 minutes until golden brown.
  2. In a skillet over medium heat, add olive oil. Sauté onions and bell peppers for about 5 minutes until softened.
  3. Add ground beef to the skillet. Cook for 7-10 minutes, breaking it up with a spoon until browned; drain excess fat if necessary.
  4. Stir in minced garlic, chili powder, cumin, smoked paprika, salt, pepper, and black beans. Cook for an additional 3-4 minutes until fragrant.
  5. Spoon the beef mixture into each tortilla bowl and top with shredded cheese until melted.
  6. Finish each bowl with fresh cilantro, sour cream or Greek yogurt, diced tomatoes (if desired), and a squeeze of lime juice.
