  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 16 oz full-fat cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs (room temperature)
  • ¼ cup fresh lemon juice
  • Zest of 2 lemons
  • ½ cup sour cream
  • 1 tsp pure vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine graham cracker crumbs and melted butter. Press into the bottom of a greased baking pan.
  3. Beat cream cheese until smooth, then gradually add sugar until fluffy. Mix in eggs one at a time, followed by lemon juice and zest.
  4. Pour half of the cheesecake mixture over the crust. Add dollops of remaining mixture on top and swirl for marbling.
  5. Bake for 25-30 minutes or until edges are set but center jiggles slightly. Cool before chilling in the fridge for at least two hours.
  6. Mix sour cream with vanilla extract and spread over cooled bars before slicing.
